Herb Roasted Chicken Leg Quarters

  • 4 chicken leg quarters bone-in, skin-on
  • 2 teaspoons Italian seasoning mix or dried oregano if you don’t have a mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 2 tablespoons lemon juice
  • 1 tablespoon butter


  1. Preheat oven: to 425°F.
  2. Dry chicken: pat dry with paper towels.
  3. Melt butter: Melt butter in microwave (15-30 seconds).
  4. Season chicken: add chicken skin-side up to baking sheet and brush on both sides with melted butter. Season with Italian seasoning, paprika and salt. Drizzle chicken with lemon juice.
  5. Bake: 50-60 minutes, or until chicken is thoroughly cooked. Let meat rest for 10 minutes before slicing.
