How To Make Cauliflower Rice (With Or Without A Food Processor)

Cauliflower rice is a staple for people trying to eat more vegetables and less starchy foods. It absorbs the flavor it’s paired with so it’s an awesome substitute for real rice. Some grocery stores like Costco are even starting to sell bags of pre-chopped cauliflower that you just microwave and your cauli rice is done.

If you can’t find it in your produce or frozen aisles, then you have to make it yourself. We’re not going to even pretend that it’s easy to make cauliflower rice without a food processor. If you love this side dish and are super busy, just buy a dang blender or food processor (or find a store that sells it premade).

It takes about 6 minutes to chop up the cauliflower into rice size with a food processor and about 25 minutes to grate it by hand. If you grate it… get ready for cauliflower chunks to be flying all over your kitchen and end up in your hair.

  • 1 head cauliflower
  • 1 tablespoon olive oil


  1. Prep: remove stem and leaves from cauliflower. Cut cauliflower into manageable sizes for either hand grating or fitting in the food processor. Then hand grate the cauliflower or run the food processor until it's rice sized. If using a grater, try to grate it in a big bowl to contain the mess.  
  2. Saute: add 1 tablespoon olive oil to large skillet over medium-high heat. Cook uncovered for 6-8 minutes, stirring frequently. Work in batches if needed so you don’t crowd the pan too much. 


    Microwave: put grated cauliflower in microwavable safe container with lid on but partially lifted for some air flow. Microwave for 7-10 minutes or until cauliflower rice is soft enough to your liking. You can omit the oil if you use the microwave or stir it in if you'd like.

Recipe Notes

Most recipes require you to ring out and dry the cauliflower before using it. When you're trying to make a pizza crust or anything with a crunch, then this step is pretty important. You can skip the drying out step when you are making things like cauliflower rice that don't have to be crunchy. It will save you time and help you avoid having to buy a cheesecloth or some other item to ring out the cauliflower.
