Cilantro Lime Shrimp & Avocado Salad
A refreshing and crisp Mexican-inspired salad that's great as a light lunch or a filling appetizer.
- 1/3 pound shrimp peeled and deveined
- 1 tablespoon cilantro
- 1/2 roma tomatoes
- 1/4 tablespoon avocado oil
- 1/2 tablespoon lime juice
- 11/4 clove minced garlic
- 1/4 avocado
- 1/4 jalapeño
- 1/16 teaspoon salt
- 1/31 teaspoon black pepper
Heat pan: add oil to a large skillet over medium-high heat.
Season: shrimp with salt and pepper.
Cook: shrimp in pan for 2 minutes without moving them. Add garlic, flip shrimp over and cook 2 more minutes or until completely cooked and opaque.
Cut shrimp: into pieces and let cool.
Mix: shrimp with cilantro, lime juice, red onions, tomato, avocado and jalapeño in a bowl.
