Easy Bruschetta Chicken

Who doesn’t love bruschetta? Seriously? Now you can have bruschetta inspired dish that’s gluten-free and low carb.

Fastest way: We provided a recipe with dried herbs and you could even use canned tomatoes if you want to save time on the chopping.

Tastiest way: Use fresh basil and fresh tomatoes instead of dried herbs. Fresh herbs really do make all the difference!

For the bruschetta topping:

  • 4 roma tomatoes
  • 1 garlic clove minced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper

For the chicken:

  • 2 chicken breasts boneless, skinless
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese


  1. Preheat oven to broil (or 500°F)
  2. Mix bruschetta topping ingredients.

  3. Cut the chicken breasts in half and season with salt and pepper.
  4. Heat the pan with 2 tablespoons olive oil in a large skillet over medium-high heat.
  5. Cook chicken for 3 minutes on one side. Flip the cutlets over and wait 2 minutes. Add bruschetta topping on each chicken and sprinkle with cheese.
  6. Put the skillet in the oven if you have an ovenproof skillet or if not then transfer the chicken cutlets to a baking sheet. Broil for about 3 minutes or until the cheese has melted.
