The Easiest Crockpot Cashew Chicken

This easy and healthy crockpot cashew chicken recipe only takes 15 minutes to prep and will feel like take out from your favorite Chinese restaurant. Just dump the ingredients into your slow cooker and get a delicious and healthy dinner with extras for leftovers!

  • 2 pounds boneless chicken thighs
  • 1/2 cup raw cashews
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons tomato paste
  • 2 garlic cloves minced
  • 2 teaspoons honey
  • 1/8 teaspoon ground ginger powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • ¼ cup chives chopped


  1. Mix sauce: soy sauce, rice wine vinegar, honey, tomato paste, garlic, black pepper, red pepper flakes, and ginger in a small bowl or directly in the slow cooker.
  2. Trim chicken: remove all white fatty chunks so the dish won’t be drowning in grease. Add chicken to slow cooker and coat with sauce.
  3. Cook: in slow cooker on high for 4 hours or low for 8 hours. (4 hours is the ideal time).
  4. Add: cashews and stir in crockpot just before serving. Cut or shred chicken pieces and serve with diced chives.

Recipe Notes & Tips

Some great side dishes to serve with this Crockpot Cashew Chicken recipe would be cauliflower rice or stir fried veggies. You can also toss it in lettuce wraps and skip a side all together!

If you have some extra time, it always tastes better if you brown meat before putting it in the crockpot (this gives the dish a more meaty and rich flavor). All you need to do is heat up a skillet with some oil and toss the chicken in long enough until it gets a golden brown exterior. Then let the crockpot work its magic for unbelievably tender meat.
