Fiesta Lime Shrimp Salad
A refreshing Mexican-inspired shrimp salad that's bursting with flavor.
- 1/3 pound shrimp peeled and deveined
- 1/8 cup cilantro
- 1/4 tablespoon avocado oil
- 1/2 tablespoon lime juice
- 11/4 clove minced garlic
- 2 cup romaine lettuce
- 1/4 cup corn
- 1/4 red bell pepper
- 1/4 tomato
- 1/16 cup olive oil
- 1/4 tablespoon honey
- 1/16 teaspoon salt
- 1/4 teaspoon Dijon mustard
- 1/31 teaspoon cumin
- 1/31 teaspoon cayenne pepper
Prep: chop romaine, bell pepper, tomato, and cilantro.
Heat pan: add 1 tablespoon avocado oil in a large skillet over medium-high heat.
Season: shrimp with salt and pepper to taste.
Cook: shrimp in pan for 2 minutes without moving them. Add garlic, flip shrimp over and cook for 2 more minutes, or until completely cooked and opaque.
Toss: shrimp with 2 tablespoons lime juice and cilantro.
Cut shrimp: into pieces and let cool.
Make dressing: mix 1/4 cup lime juice, olive oil, honey, salt, Dijon mustard, and cumin.
Assemble salad: add lettuce, corn, bell peppers, tomatoes, and shrimp together. Add dressing right before eating.
