Greek Ground Turkey Skillet With Sun-dried Tomatoes

  • 1/3 pound ground turkey
  • 1/4 tablespoon olive oil
  • 1/4 clove minced garlic
  • 1/8 red onion
  • 1/4 bell pepper
  • 1/4 cup chicken broth
  • 1 cup premade cauliflower rice
  • 1/3 teaspoon dried oregano
  • 1/3 teaspoon dried thyme
  • 1/8 cup sun-dried tomatoes
  • 1/4 cup fresh spinach
  • 1 tablespoon lemon juice
  • 1/16 cup olives
  • 1/8 cup feta cheese


  1. Prep: roughly chop bell pepper and onion.
  2. Heat pan: add oil to a large skillet over medium heat.
  3. Add: garlic, bell pepper, and onion to pan and cook for 1 minute.
  4. Add: ground turkey, thyme, and oregano to pan and cook for 7 minutes, stirring frequently.
  5. Add: chicken broth and cauliflower rice and cook for 5 more minutes.
  6. Add: spinach, olives, sun-dried tomatoes and lemon juice. Cook until spinach is wilted, about 2 minutes.
  7. Top: with feta cheese and season with salt and pepper to taste.
