If you love pasta but want to cut down on your carbs or even just up your nutrition intake, we whipped up this ground turkey bolognese spaghetti squash that’s perfect for you. It tastes just like your favorite Italian joint’s, but with way less carbs and salt, and way more good-for-you ingredients. Plus, it’s super customizable.

You can add red pepper flakes to taste if you want some spice, or add some mushrooms for some extra flavor depth.

Ground Turkey Bolognese Spaghetti Squash

A low-carb and less meaty version of a classic Italian favorite.

  • 1/4 large spaghetti squash
  • 1/3 pound ground turkey
  • 1/4 white onion
  • 1 clove minced garlic
  • 1/4 whole carrot
  • 7 ounce canned crushed tomatoes
  • 1/16 cup fresh basil
  • 1/4 tablespoon olive oil
  • 1/8 cup grated parmesan cheese


  1. Pierce: the squash 15 times all around with a sharp knife. Place in a microwavable safe dish.
  2. Microwave: 10 minutes for small squash and 15 minutes for large squash. Carefully set aside to cool when done.Prep: finely dice onion, carrot, garlic, and basil.
  3. Heat pan: add oil to a large skillet over medium heat.Add: onions, garlic, and carrots to pan and cook for about 3 minutes.
  4. Add: ground turkey to pan and cook for 3 minutes.
  5. Add: canned tomatoes and basil to pan and stir. Simmer uncovered for 10 minutes, stirring occasionally.
  6. Season: with salt and pepper to taste.
  7. Cut: squash in half lengthwise and remove seeds. Then, use a fork to scrape out the spaghetti strands.
  8. Toss: spaghetti squash and sauce together. Top with parmesan cheese.
