Healthy Orange Beef and Broccoli Stir-Fry
A sweet and savory beef dish that's easy to meal prep.
- 12 ounce flank steak
- 1 orange
- 1 tablespoon honey
- 3 tablespoon soy sauce (use a gluten-free soy sauce for gluten allergies)
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1 head of broccoli
- 1/2 yellow onion
- 2 tablespoon avocado oil
- 4 cups premade rice or cauliflower rice
Cut: steak into 2-inch thin slices.
Prep: pat beef dry with paper towels, then season with salt and pepper.
Chop: broccoli and onion into bite-sized pieces.
Make sauce: zest orange until you have 1 tablespoon zest. Squeeze orange juice into a bowl. Mix orange juice, zest, soy sauce, honey, sesame oil, and cornstarch. Set aside for later.
Heat pan: add 1 tablespoon avocado oil in a large skillet over medium-high heat.
Cook steak: add steak to pan and sear for about 1-2 minutes per side or until browned. Set aside on plate.
Cook vegetables: add 1 tablespoon avocado oil, broccoli, and onion to the same pan and cook 5-6 minutes until onions are translucent and broccoli is cooked. Add a few tablespoons of water at a time if needed to prevent vegetables from getting black before they’re cooked tenderly enough to your preference.
Add: sauce and beef back to pan with vegetables and stir to coat. Cook for 1-2 more minutes then serve with rice.
