This kale chicken caesar salad puts an even healthier twist on a classic salad that everyone loves. This recipe uses kale instead of lettuce, but is still just as simple, delicious, and easy as a regular chicken caesar salad. Don’t worry, there’s nothing too crazy about this recipe. You only need 7 ingredients to make a savory and filling salad that’s sure to be a hit with your friends and family.
We intentionally left this recipe simple so that you can have a delicious and flavor-filled salad ready in under half an hour, but you can always customize things to your own tastebuds! You can try adding pine nuts or almonds on top if you want some crunch. Want some more flavor and greens in your salad? Try adding some mashed avocado!
Kale Chicken Caesar Salad
A deliciously savory salad that's filled with protein and bursting with vitamins and good-for-you ingredients.
- 1/2 pound chicken breasts boneless, skinless
- 1/2 tablespoon olive oil
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 3 cup kale
- 1/16 cup caesar salad dressing
- 1/8 cup grated parmesan cheese
[Optional] Brine: add 2 quarts of water and ¼ cup table salt to a large bowl. Stir so salt is dissolved, then add chicken. Let brine for at least 15 minutes and up to 1 hour.
Preheat oven: to 450°F.
Remove: chicken from brine, rinse with water so it won’t be too salty and pat dry with paper towels.
Season chicken: add chicken to baking sheet and drizzle with olive oil. Season with onion powder and garlic powder. Add some black pepper to taste if you’d like!
Bake: 16-20 minutes, or until chicken is thoroughly cooked. Let meat rest for 10 minutes before slicing.
Assemble salad: add kale to containers. If it’s going to be a few days before you eat, then store parmesan cheese in plastic bags. Always store the dressing separately.
