Lazy Chicken Cabbage Stir Fry
This is the lazy version of a chicken cabbage stir fry because we used a bag of cole slaw to save time on washing and chopping cabbage. You can shred heads of purple and green cabbage yourself to save money or make a bigger batch.
Ninja Tip: You can save even more time by cooking whole chicken tenderloins instead of cutting up chicken breasts.
Chicken Cabbage Stir Fry
This low carb stir fry swaps out rice and noodles with cabbage for a quick and healthy dinner.
- 3 chicken breasts boneless, skinless
- 1 bag coleslaw
- 2 tablespoons olive oil
Stir Fry Sauce Ingredients:
- 2 tablespoon soy sauce or coconut aminos
- 2 tablespoon rice wine vinegar
- 4 garlic cloves minced
- 1/4 teaspoon ginger
- 1 teaspoon red pepper flakes
- salt to taste
Heat pan: add 2 tablespoons olive oil in a large skillet over medium-high heat.
Prep chicken: Dry chicken with paper towels. Generously season both sides of chicken with salt. Cut chicken into 1-inch sized bites.
Cook chicken: Add the chicken to pan and cook for 3-4 minutes on each side just flipping over once, until browned and thoroughly cooked. Transfer chicken to plate.
While chicken is cooking, mix stir fry sauce ingredients in a small bowl.
Cook cabbage: Add minced garlic and cabbage to the same pan and sauté 2 minutes until cabbage starts to wilt. Add stir fry sauce and sauté for 2 more minutes. Mix in chicken and serve.
