Mexican Cauliflower Rice

Even people who don’t love cauliflower will LOVE this dish. The tomato paste makes this faux “rice” a savory side that will be a great addition to any Mexican entrees. You can find premade cauliflower rice at the grocery store and just throw it in the microwave. If you’re ok spending an extra 15 minutes and want to save money, then you can follow these instructions to make your own cauli rice from cauliflower heads.

Mexican Cauliflower Rice

  • 4 cups premade cauliflower rice cooked
  • 1/2 medium onion finely diced
  • 2 tomatoes chopped
  • 2 garlic cloves minced
  • 3 tablespoons tomato paste
  • 1 tablespoon avocado oil (you can substitute another cooking oil like vegetable oil if you don't have this on hand)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • Pepper to taste


  1. Heat the pan: add 1 tablespoon cooking oil in a large pot over medium-high heat.
  2. Cook: onions and garlic for about 3-4 minutes.
  3. Add: tomatoes, tomato paste, chili powder, cumin, salt and pepper to the same pan. Stir in cauliflower rice and simmer everything for a couple of minutes.
