Pizza meatloaf muffins aren’t usually anyone’s first idea of a healthy and easy recipe for weekly meal prep, but we promise that you’ll love these. They’re filling, made with good-for-you ingredients, and fit right into your Tupperware. And worry not, this is a dish everyone in the family can enjoy – even the pickiest of eaters will find something to like about these muffins.

If you’re not a fan of turkey, you can always swap out the meat or just veggies. If you like spice, you can add red pepper flakes to turn up the heat. You can also add some extra veggies in the mix like mushrooms or bell peppers if you wanna feel really healthy.

  • 1/3 pound ground turkey
  • 1/4 cup yellow onion
  • 1/2 egg
  • 1/16 cup almond flour
  • 1/16 teaspoon salt
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon dried basil
  • 1/8 teaspoon dried oregano
  • 1/16 cup marinara sauce
  • 1/4 cup mozzarella cheese
  • 1/2 ounce pepperoni


  1. Preheat Oven: to 350°F.
  2. Prep: finely dice the onion.Whisk: eggs in a large bowl. Mix in ground turkey, onion, almond flour, salt, onion powder, garlic powder, basil, and oregano.
  3. Spoon: the meatloaf mixture evenly into each muffin tin cup.
  4. Top: each muffin evenly with a spoon full of marinara sauce then add cheese and pepperoni.
  5. Bake: for 25-30 minutes or until the inside of the meatloaf reaches 165°F.
  6. Serve: meatloaf with extra cheese and marinara dipping sauce.
