We provided the stove top recipe here since it cooks in under 10 minutes. You can also throw it in the slow cooker on low if you want to have it ready when you get home. The soup isn’t the prettiest color but we promise it tastes better than it looks!

Quick Vegan Pea Soup

Ingredients

  • 2 bunches of green onion
  • 1 tablespoon olive oil
  • 32 ounce frozen green peas
  • 32 ounce vegetable stock
  • 0.25 teaspoon salt

Instructions

  1. Finely dice: the green onion.
  2. Add: oil and green onion to a 1 quart sized pot over medium-low heat. Cook for 1-2 minutes.
  3. Add: vegetable stock and peas.
  4. Cook: for 5 minutes with the lid on.
  5. Blend: use an immersion blender and blend until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and work in batches until blended.
  6. Add: salt and pepper to taste.

Recipe Notes

Serve with bread or a side salad.  Vegan cheese similar to parmesan or goat cheese would be a nice topping.
