We provided the stove top recipe here since it cooks in under 10 minutes. You can also throw it in the slow cooker on low if you want to have it ready when you get home. The soup isn’t the prettiest color but we promise it tastes better than it looks!
This recipe is part of our Seasonal Vegan Meal Prep Series with one meal plan for every season. Each plan helps you meal prep most of your week in under 90 minutes.
Quick Vegan Pea Soup
- 2 bunches of green onion
- 1 tablespoon olive oil
- 32 ounce frozen green peas
- 32 ounce vegetable stock
- 0.25 teaspoon salt
Finely dice: the green onion.
Add: oil and green onion to a 1 quart sized pot over medium-low heat. Cook for 1-2 minutes.
Add: vegetable stock and peas.
Cook: for 5 minutes with the lid on.
Blend: use an immersion blender and blend until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and work in batches until blended.
Add: salt and pepper to taste.
Serve with bread or a side salad. Vegan cheese similar to parmesan or goat cheese would be a nice topping.
