Roasted Dijon Brussels Sprouts

This simple recipe is a great way to dress up brussels sprouts with some extra flavor. Make sure to save some of the vinaigrette to drizzle over the brussels sprouts after they come out of the oven!

Roasted Dijon Brussels Sprouts

  • 1 pound brussels sprouts
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • salt and pepper to taste


  1. Preheat: oven to 400°F.
  2. Prep: line baking sheet with foil or use cooking spray.
  3. Cut: ends off brussels sprouts. Then cut them in half lengthwise.

  4. Mix: olive oil, red wine vinegar and dijon mustard in a large bowl. Add in brussels sprouts and coat with sauce. Season with salt and pepper to taste. Reserve any extra sauce for drizzling over the brussel sprouts after they’re done.
  5. Bake: add brussels sprouts to pan and bake for 35-40 minutes.
