Enjoy all the flavor of a sloppy joe without the red meat in this vegan take on an American classic. If you’re using a pressure cooker or slow cooker with a sauté feature, be sure to sauté your onions first with a little bit of oil to add some extra flavor before slow cooking the rest of your ingredients. You can add pickles or ketchup for some tang or put some vegan cheese on top if you want something a bit more hearty.

Serving ideas:

  • Enjoy it as a sandwich with a side dish of your choice.
  • Make sloppy joe stuffed sweet potatoes to make it more filling.
  • This dish is great on its own with some side salad or broccoli.
