Turkey Stuffed Acorn Squash

Satisfy your holiday food cravings with this healthy and delicious turkey stuffed acorn squash.

  • 1/3 pound ground turkey
  • 1/4 tablespoon avocado oil
  • 1/2 acorn squash
  • 1/4 apple
  • 1 cup mushroom
  • 1/2 celery stalks
  • 1/2 clove minced garlic
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/8 teaspoon nutmeg


  1. Microwave: acorn squash for 1 minute in a microwave-friendly container. Cut in half. Microwave again for 7-9 minutes. Set aside and let cool. You can cut them in half and roast for an hour in the oven at 400°F instead of microwaving if you want.
  2. Prep: roughly chop mushrooms, celery, and apple.
  3. Heat pan: add oil to a large skillet over medium heat.Add: garlic, celery, onion, mushrooms, and apple to the pan and cook for 1-2 minutes.
  4. Add: ground turkey, onion powder, thyme, rosemary, and nutmeg to the pan and cook for 7-10 minutes, stirring frequently. Remove from heat.
  5. Scoop: out seeds from the acorn squash using a fork.
  6. Stuff: turkey mixture into acorn squashes and serve or store! You might have extra meat than can’t fit inside the squashes that you can eat on the side.
