This vegan chicken salad is so amazing you won’t miss the chicken AT ALL. It’s inspired by the classic chicken Waldorf salad with grapes and to give it a little extra crunch.

Vegan Waldorf “Chicken” Salad
- 1 apple
- 2 celery stalk
- 1 cup red grapes
- 14.5 ounce canned chickpeas
- 0.5 cup vegan mayonnaise
- 2 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 tablespoon lemon juice
- 0.5 cup chopped walnuts
- 8 cup mixed baby greens
Prep: finely dice the apple and celery. Cut the grapes in half.
Drain and rinse: the chickpeas.
Mix: mayonnaise, Dijon mustard, and lemon juice in a large bowl. Stir in chickpeas, apples, celery, walnuts and grapes. Add salt & pepper to taste.
Serve: with mixed baby greens.
Storage: put mixed baby greens on one half of the container and the chickpea salad on the other half so the lettuce doesn’t wilt.
