This vegan chicken salad is so amazing you won’t miss the chicken AT ALL. It’s inspired by the classic chicken Waldorf salad with grapes and to give it a little extra crunch.

Vegan Waldorf “Chicken” Salad

  • 1 apple
  • 2 celery stalk
  • 1 cup red grapes
  • 14.5 ounce canned chickpeas
  • 0.5 cup vegan mayonnaise
  • 2 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 0.5 cup chopped walnuts
  • 8 cup mixed baby greens


  1. Prep: finely dice the apple and celery. Cut the grapes in half.
  2. Drain and rinse: the chickpeas.
  3. Mix: mayonnaise, Dijon mustard, and lemon juice in a large bowl. Stir in chickpeas, apples, celery, walnuts and grapes. Add salt & pepper to taste.
  4. Serve: with mixed baby greens.
  5. Storage: put mixed baby greens on one half of the container and the chickpea salad on the other half so the lettuce doesn’t wilt.
