Vegan Chickpea Dijon “Tuna” Salad
This delicious vegan chickpea salad is seasoned with dijon mustard and apple cider vinegar to create a unique flavor profile. It's the classic tuna salad, but better.
- 29 ounce canned chickpeas
- 2 tablespoon tahini
- 1 tablespoon Dijon mustard
- 2 tablespoon olive oil
- 2 tablespoon apple cider vinegar
- 4 dill pickle spears
- 1/4 cup red onion
- 8 cup mixed baby greens or pitas/wrap/bread
- 1 teaspoon dried dill
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Finely dice: dill pickles and red onion and add to a large bowl.
Drain: chickpeas and add to the same bowl.
Add: tahini, Dijon mustard, olive oil, apple cider vinegar, and pickles to the bowl.
Store: chickpea salad separately from the bread or baby greens so it doesn’t get soggy. Assemble right before eating.
