Vegan Chickpea Dijon “Tuna” Salad

This delicious vegan chickpea salad is seasoned with dijon mustard and apple cider vinegar to create a unique flavor profile. It's the classic tuna salad, but better.

  • 29 ounce canned chickpeas
  • 2 tablespoon tahini
  • 1 tablespoon Dijon mustard
  • 2 tablespoon olive oil
  • 2 tablespoon apple cider vinegar
  • 4 dill pickle spears
  • 1/4 cup red onion
  • 8 cup mixed baby greens or pitas/wrap/bread
  • 1 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder


  1. Finely dice: dill pickles and red onion and add to a large bowl.
  2. Drain: chickpeas and add to the same bowl.
  3. Add: tahini, Dijon mustard, olive oil, apple cider vinegar, and pickles to the bowl.
  4. Store: chickpea salad separately from the bread or baby greens so it doesn’t get soggy. Assemble right before eating.
