  • 2 pounds boneless chicken thighs
  • 1/2 cup raw cashews
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons tomato paste
  • 2 garlic cloves minced
  • 2 teaspoons honey
  • 1/8 teaspoon ground ginger powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • ¼ cup chives chopped


  1. Mix sauce: soy sauce, rice wine vinegar, honey, tomato paste, garlic, black pepper, red pepper flakes, and ginger in a small bowl or directly in the slow cooker.
  2. Trim chicken: remove all white fatty chunks so the dish won’t be drowning in grease. Add chicken to slow cooker and coat with sauce.
  3. Cook: in slow cooker on high for 4 hours or low for 8 hours. (4 hours is the ideal time).
  4. Add: cashews and stir in crockpot just before serving. Cut or shred chicken pieces and serve with diced chives.
