Healthy Slow Cooker Greek Chicken

Ingredients

  • 1.5 pound chicken thighs (boneless, skinless)
  • 6 ounce artichoke hearts
  • 1 yellow onion
  • .25 cup red wine vinegar
  • 2 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 2 red bell pepper
  • .5 cup olives
  • 4 clove minced garlic
  • 2 teaspoon dried thyme
  • .25 teaspoon salt
  • .5 cup feta cheese

Instructions

  1. Prep: chop bell pepper and onion into large pieces.

  2. Trim: any excess fat off of chicken thighs.

  3. Add: all ingredients to slow cooker and cook on high for 3-4 hours or on low for 6-8 hours. 

  4. Top with feta cheese when done.
